Join our team in Amanjena. Inspired by the rose-hued buildings of old Marrakech, palatial Amanjena is close to the fabled Red City, set in its own expanse of gardens and grand open spaces. Shaded courtyards with fountains lead to the central basin, bordered by spacious standalone Pavilions & Maisons, many with private pools. Views stretch across the olive groves and palms of the oasis, extending to the High Atlas Mountains on the horizon.
Role
The Chef de Rang mission is to guarantee the smooth running of his or her range by providing a quality of service that meets current standards.
Responsibilities
- Supervise commis and trainees
- Work in collaboration with the restaurant manager and the commis to guarantee quality service
- Support commis and trainees as they develop their skills
- Ensure compliance with health and safety standards in the restaurant
- Respect and ensure respect for service quality criteria, and update them regularly
- Check the alignment of tables and chairs and the sturdiness of furniture with clerks and trainees
- Display and iron tablecloths and under-tablecloths
- Check all staff uniforms Ensure the cleanliness of tableware (all china, silverware, glassware, etc.)
- Set up tables
- Set up console and side tables (Gueridon)
- Create a comfortable environment for guests
- Greet guests according to Amanjena standards Take orders
- Communicate all service instructions to clerks and trainees
- Follow up on calls made over the microphone by the assistant Serve bread and food
- Prepare the necessary cutlery according to the dishes served Adhere to service protocol
- Coordinate with the bar attendant/Barman to take drink orders before setting the table
- Serve cheese (have a thorough knowledge of the products)
- Perform table maintenance (bread, butter, ashtray, etc.)
- Maintain proper seating: pass the bread, change the ashtrays, light cigarettes, pull out chairs for guests, change napkins, escort guests to the sinks, and clean up crumbs between courses if necessary
- Take coffee orders and write a receipt with all the information
- Handle payments and operate the point-of-sale (POS) system accurately
- Organize and participate in tidying and cleaning the range and service areas
- Ensure cleanliness, the quantity of linen available, and the tidying of the dining room at the end of each service
- Control the quality of food served
- Pay attention to equipment breakage and maintenance
- Follows the guidelines of grooming defined by the property
- Excellent knowledge of the hotel's service ritual "SEVA" & the brand promises related to the department
- Ensure compliance of brand standards and always follow all hotel policies and procedures
- Establish and maintain effective employee relations as well as effective communication across all divisions
- Carry out all tasks assigned by the manager, within the scope of his/her professional category and according to his/her skills
- Check your dress and hygiene on daily basis
- Participate actively in trainings.
Requirements
- Proven experience as a Chef de Rang in a fine dining or luxury hotel environment.
- Passion for guest service, with excellent interpersonal and communication skills.
- Attention to detail, refined organizational abilities, and a proactive attitude.
- Ability to work collaboratively within a multicultural, multilingual team.
- Proficiency in English and French
- Well-groomed appearance and a natural sense of elegance and discretion.
